Ingredients

  • 1.25 lb ground beef
  • 1 tsp minced garlic
  • 4 cups frozen mixed veggies
  • 8 medium sized red potatoes
  • 1/4 cup butter
  • 1/2 cup milk
  • 2 tsp salt
  • 1 cup shredded cheddar

Directions

Step 1: Brown meat with garlic, place in 9 x 9 baking dish. Top with veggies.

Step 2: Cut potatoes into cubes (peeling is optional). Place in large pot and cover with water. Set on stove high heat until boiling, then reduce heat to simmer for 15 minutes. Drain water. Add butter, milk, and salt. Mash with a masher or blender. Stir in cheddar.

Step 3: Spoon potatoes on top of veggies.

Step 4: Bake 350 for 30 minutes.
