Homemade Biscuits

Nothing makes me feel cozier on the inside than eating a hot, freshly homemade biscuit. It brings back memories of my mamaw serving us at her kitchen table. The biscuits were, of course, covered with sausage gravy. And there were always a few extra biscuits to have with my papaw’s raw honey as “dessert.” It was glorious!

Here is my recipe that I have developed over the past few years. Enjoy!

Ingredients

  • 2 cups all purpose flour
  • 1 Tb baking powder
  • 1/2 tsp salt
  • 1/3 cup butter, cold and sliced
  • 3/4 cup milk

Directions

Step 1: Combine flour, baking powder, and salt

Step 2: Add butter. Use pastry blender until cornmeal texture is achieved.

Step 3: Stir in milk until dough is formed. Knead on floured surface 10 times.

Step 4: Roll out dough to 1/4 inch thickness. Cut with 2.5 inch circle cutter (or drinking glass).

Step 5: Bake 425 for 14 minutes or until golden brown.

A Healthy Treat? Yep!

I was introduced to these by my super awesome cycle teacher who is also a health coach and an all around super gal. She brought these to me after my daughter was born along with a healthy meal for my family. I was amazed that something so yummy could also be healthy.

When my husband and I decided to do Whole 30 last fall, I began making these on a regular basis. I was continually modifying the recipe until I found exactly how I wanted it. It definitely helped curb the sweet cravings.

And now I am sharing it with you!

 

EnergyBites


Ingredients

  • ~30 dates, dried and pitted
  • 2 Tb chia seeds
  • 1/2 cup almonds (or nut of choice)
  • 1/4 cup cacao powder (or cocoa-it tastes yummy, just not the same health benefits)
  • 1 tsp cinnamon
  • 1 Tb coconut oil
  • 1 Tb vanilla extract**

Directions

Step 1: Place all ingredient in food processor, and blend until well mixed.

Step 2: Roll into 1 inch balls. Store in refrigerator for up to 2 weeks.

Yields approximately 15 energy bites.

**Please note, the vanilla extract is technically not allowed in Whole 30. But if that is not a concern for you, I highly recommend adding it!

Roasted Asparagus

Ingredients

  • 1 lb asparagus
  • 2 Tb olive oil
  • 1 tsp minced garlic
  • 1 tsp salt

Directions

Step 1: In large bowl, toss asparagus with olive oil, garlic, and salt.

Step 2: Place on foil lined baking sheet. Bake on 350 for 15 minutes.

Baked Spaghetti

Ingredients

  • 1-1.5 lb lean ground beef
  • 1 small onion
  • 1 green pepper
  • 1 tsp minced garlic
  • 2 15 oz cans diced tomatoes
  • 1 15 oz can tomato sauce
  • 1 6 oz can tomato paste
  • 3 Tb Italian seasoning
  • 1 tsp kosher salt
  • 1 lb pasta, cooked
  • 4 cups mozzarella

Directions

Step 1: In large pan, brown meat with onion, pepper, and garlic.

Step 2: Add tomatoes, sauce, paste, seasoning, and salt.

Step 3: Add pasta and combine.

Step 4: Transfer to greased 9 x 13 glass pan, cover with cheese.

Step 5: Bake on 350 for 25 minutes.

Serves 8

Salsa Chicken

Ingredients

  • 2 chicken breast
  • 1 can black bean
  • 1 jar salsa

Directions

Step 1: Put all ingredients in crock pot.

Step 2: Cook on low for 6-8 hours.

Step 3: Shred chicken.

Serve on tortillas with cheddar cheese and sour cream, or with avocado and tortilla chips.

Meatloaf

Ingredients

  • 1.5 lb lean ground beef
  • 1 6 oz can tomato paste
  • 3/4 cup oatmeal
  • 2 eggs, beaten
  • 1 tsp salt

Directions

Step 1: Combine all ingredient with hands until well mixed.

Step 2: Place in oiled 9 x 5 loaf pan.

Step 3: Bake at 350 for 55 minutes, or until meat reaches internal temperature of 170.

Tuna Casserole

Ingredients

  • 1/2 lb macaroni, cooked
  • 1 small onion, finely chopped
  • 2 10.5 oz can cream of mushroom soup
  • 1 tsp salt
  • 15 oz can tuna
  • 1 lb frozen sweet peas
  • 1.5 cup panko crumbs

Directions

Step 1: Combine macaroni, onion, soup, salt, tuna, and peas in a 9 x 13 pan. Sprinkle with panko crumbs.

Step 2: Bake at 375 for 20 minutes

Chicken Acapulco

Ingredients

  • 1 onion, chopped
  • 2 Tb olive oil
  • 2 chicken breast, cooked and chopped
  • 1 10.5 oz cream of chicken soup
  • 8 oz sour cream
  • 2 4 oz can sliced mushrooms
  • 1/2 tsp oregano
  • 1/4 tsp salt
  • 10 large tortillas

 

  • 1 10.5 oz cream of chicken soup
  • 1 cup shredded cheddar
  • 1/3 cup milk

Directions

Step 1: Saute onion in butter until tender.

Step 2: Combine sauteed onion, chicken, soup, sour cream, mushrooms, oregano, and salt.

Step 3: Fill tortillas with 1/2 cup of mixture. Fold closed, including ends. Place in 2 oiled 9 x 13 pans.

Step 4: Combine soup, cheddar, and milk. Pour over rolls.

Step 5: Bake at 350 for 35 minutes.

  • 1 jar spaghetti sauce
  • 1 4 oz can sliced mushrooms
  • 1/2 lb pasta, cooked
  • 2 cup mozzarella

 

Directions

Step 1: Brown meat with onion. Add garlic, sauce, mushrooms, pasta.

Step 2: Transfer to 9 x 13 pan. Cover with cheese.

Step 3: Bake at 350 for 30 minutes, or until cheese is melted.
