Ingredients

  • 1 lb asparagus
  • 2 Tb olive oil
  • 1 tsp minced garlic
  • 1 tsp salt

Directions

Step 1: Pour olive oil in skillet on medium heat. Add asparagus, garlic, and salt.

Step 2: Stir occassionally for 10 minutes.

Ingredients

  • 8 medium red potatoes, chopped, peel on
  • 2 lb bag of frozen brussels sprouts
  • 2 Tb olive oil
  • 2 tsp salt

Directions

Step 1: Preheat oven 350 degrees

Step 2: Place potatoes and brussels sprouts on foil lined cookie sheet. Drizzle with oil and sprinkle with salt.

Step 2: Place in oven for 20 minutes, stir, and return to oven for additional 20 minutes.

Unassembled Chicken Pot Pie

Ingredients

  • 3 chicken breasts
  • 4 cups frozen mixed veggies
  • 2  10.5 oz cans cream of chicken
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt

 

  • 2 cups all purpose flour
  • 1 Tb baking powder
  • 1/2 tsp salt
  • 1/3 cup butter, cold and sliced
  • 3/4 cup milk

Directions

Step 1: Place chicken, veggies, and seasonings in crockpot. Cook on low for 6 hours.

Step 2: For biscuits combine flour, baking powder, and salt. Add butter. Use pastry blender until cornmeal texture is achieved. Stir in milk until dough is formed. Knead on floured surface 10 times. Roll out dough to 1/4 inch thickness. Cut with 2 inch circle cutter (or drinking glass). Bake 425 for 15 minutes or until golden. Serve with chicken mixture.

Option: Use Bisquick if you don’t want to make biscuits from scratch.

Butternut Squash Soup

Ingredients

  • 1 3.5 lb butternut squash, seeded, peeled, and chopped
  • 2 apples, peeled and chopped
  • 2 carrots, peeled and chopped
  • 1 onion, chopped
  • 1 tsp minced garlic
  • 4 cups chicken stock
  • 1 tsp rubbed sage
  • 1 tsp thyme
  • 1/2 tsp salt
  • optional ground black pepper
  • 1/2 cup milk

Directions

Step 1: Place all ingredients except milk in large pot. Cook on med-high heat for 30 minutes or until squash is tender.

Step 2: In portions, blend soup in food processor or blender. Pour blended portions in separate pot or large bowl until all of soup has been blended.

Step 3: Stir in milk.

Notes:

  1. Do not let soup boil, it will cause a mess!
  2. Option, serve with browned ground turkey.

Ingredients

  • 1.25 lb ground beef
  • 1 tsp minced garlic

  • 8 medium sized red potatoes

  • 1 cup shredded cheddar

Directions

Step 1: Brown meat with garlic, place in 9 x 9 baking dish. Top with veggies.

Step 2: Cut potatoes into cubes (peeling is optional). Place in large pot and cover with water. Set on stove high heat until boiling, then reduce heat to simmer for 15 minutes. Drain water. Add butter, milk, and salt. Mash with a masher or blender. Stir in cheddar.

Step 3: Spoon potatoes on top of veggies.

Step 4: Bake 350 for 30 minutes.

Directions

Step 1: Cook rice according to package directions. Meanwhile boil chicken until cooked (about 10-15 minutes), then chop into bite size pieces.

Step 3: Bake 325 for 30 minutes
